Two of Australia’s Great Chefs Are Joining Forces to Open New Restaurant Chuuka

Chef Chase Kojima (The Star’s Sokyo and Kiyomi) and Chef Victor Liong (Melbourne’s Lee Ho Fook) will turn tradition on its head at Chuuka by converging the distinct flavours and techniques of Japan and China into one visionary dining experience featuring fresh local produce.

Chuuka will feature a spectacular outdoor bar & lounge area with panoramic views across the harbour, as well as an indulgent wine and a 130-seat dining area across two levels.

The successful candidate will be a skilled mixologist with in depth knowledge of bar and restaurant operations and management experience in a similar role within a high volume fast paced, high-end bar.  

You will lead and train a team of six Bar Attendants and one Bar Supervisor.  A big part of this role is ensuring you and your team take guest on a whimsical journey through your cocktail creations.

  • Create innovative promotions and concepts for the cocktail menu
  • Supervise, guide and hold staff accountable in the daily operations
  • Lead by example, assisting on the floor when necessary
  • Recruit, develop and train our team
  • Work with the Restaurant Manager to analyse financial performance by managing the stock, controlling costs, P&L, wages and other incidentals
